Crockpot Roasted Chicken

When you have a big day ahead, it's so nice to have a hot, delicious dinner waiting for you when you get home. Now imagine coming home to a rich, roasted chicken that you didn't have to sweat over. Sounds amazing, right? In this case, your crockpot will be your best friend! This recipe requires minimal prep and will fill your house with an amazing aroma of herbs and lemon. Plus, you can use the cooked chicken for meal prepping and the bones for a homemade bone broth!

Serves 4

Prep Time: 10 minutes

Cook Time: about 6 hours

Ingredients

1 Whole raw chicken

1 lemon

Bundle of rosemary

Salt and pepper (to taste)

Instructions

1. Remove whole chicken from freezer wrap.

2. Tuck into your crockpot, right side up, leaving the skin on.

3. Top with sliced lemons and rosemary.

4. Shake salt and pepper on top.

5. Cook on low for 6 to 8 hours, or on high for 4 to 5 hours. Chicken is done when the juices run clear, and meat is tender.

6. Place cooked chicken on a cutting board, with a plate or large bowl nearby.

7. Using your hands or a large fork, pull all of the meat off of the bone and place in an individual containers in the fridge for an easy to go lunch.

Tips

1. You can save the bones to boil down for bone broth!

2. Optional ingredients to add in the crock pot include dill, squash, carrots and potatoes.
